Strawberry Banana Bread Recipe: High Protein with Greek Yogurt

Looking to step up your banana bread game? Then you need to make this strawberry banana bread recipe! With greek yogurt that helps to make it high in protein so this yummy bread will leave you not only happy from it’s deliciousness but also full.

I am a huge fan of incorporating in high protein elements to baked goods whenever possible. As a vegetarian this is a great way to easily incorporate protein into my diet! But regardless of your diet why not add some nutrition into your baking that doesn’t compromise the taste?

So let’s get into the recipe so you can start to make this strawberry banana bread!

Oh, and I made this into mini loafs but the recipe would work perfectly for standard bread loaf pans as well.

Strawberry Banana Bread Recipe: High Protein with Greek Yogurt

Healthy (ish) strawberry banana bread loaf to make:

Ingredients:

  • 2 cups of flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 mashed bananas (the riper the better!)
  • 2 cups sliced strawberries
  • 3/4 cup granulated sugar
  • 1 cup greek yogurt (vanilla or unflavored, Ive used both and yes the vanilla is a tiny bit sweeter)
  • 1/2 stick melted butter
  • 1 package banana pudding
  • 3 eggs

Instructions:

Step 1: Grab your mixing bowl and add dry ingredients (flour, pudding mix, baking powder, baking soda, granulated sugar).

Step 2: Prep the fruit! Cut up the strawberries into thin slices – the texture will get weird if the strawberries are too big but personally I like them to be decently sized. You could also dice them a lot smaller if you prefer. And then throw your bananas into a small bowl and mash them up with a fork.

Step 3: Add the above fruit into the mixing bowl with the dry ingredients. Use a flat spoon or spatula to fold the fruit in evenly amongst the dry ingredients.

Step 4: Add liquid ingredients (melted butter, eggs).

Step 5: Use the flat spoon or spatula to fold the liquid ingredients in. If you whisk it too much instead of folding it in you could get a flatter and less tasty texture at the end!

Step 6: Add to the loaf pan (or pans) you are using. I recommend spraying them with an oil as well to help the bread not stick.

Step 7: Bake at 375 degrees for approximately 20 minutes. I recommend grabbing a fork and checking them at 15 minutes- if you stick the fork into the bread loaf and dough comes out on it then they are not done! When you repeat that and the fork comes out dry then you know they are done. Pull them out as soon as you see they are done so they aren’t over cooked.

Bonus: They taste great with butter on top of the slice of course but we preferred eating them with strawberry jelly on top! So tasty!
